光明は、高精白の限界に挑戦しました。
山田錦は、その強い骨格と豊かな風味から、酒米の王様と呼ばれています。
出羽燦々に比べ、山田錦は柔らかく、精白が難しいため、直径1mmまで精白するのに75日かかります。
